I tutored at the elementary school this morning. My kids were not in the best moods and therefore not too enthused about reading with me. We plowed through but there is 1 thing this experience has taught me - I have to find a way to teach my kids to love reading or they will have major issues.After work, and getting my hair done, I went to Esther's to watch Confessions of a Shopaholic. Second time around it was better because I knew what to expect...still not a great movie. BUT it was fun to hang out with Esther and Andrew.

I didn't go to work today - I felt nauseous on and off all day and couldn't bear the idea of sitting up. Mary and Tara came and had lunch with me, and later in the afternoon I went to Target with Kaitlin and Joslin. Joslin ran off to FHE and Kaitlin and I had dinner at Thai Ruby. Thai Chili Garden may have taken the month off but I can always find some pad thai.

After dinner Mary and I went to Best Buy to look at laptops. Mary is ready for a new one, I'll be ready within 6 months and we're both facing the Mac vs. PC debate. I'm leaning toward Mac but what if...that's a lot of money to spend on something that may not be functional Any advice? Are you a Mac or a PC lover? Would you change if you could?

Wordle

Word Clouds floated around the blogosphere a while ago, and I never did one. Today I made one from my blog and while I like it, I think other applications would be cooler. Can you imagine writing a long letter to a friend about all the reasons you love them and taping the letter to the back of a framed word cloud of the letter? Darling. Wordle, I'm excited to get to know you better.

Cobbler recipe

For Malea and Olivia because they ate it (twice) and asked for the recipe and for Amy because she hasn't tasted it but should!

Comments from me before we begin: use whatever fruit you want - I've done blackberries & blueberries and strawberries, blueberries & blackberries. Also, I've never used real buttermilk because I don't keep it in the house. I used 1 tablespoon lemon juice plus enough milk to make 1 cup one time and another time I used 1 cup vanilla soy milk plus 1 3/4 tablespoons cream of tartar. I preferred the soy milk variety and will make it that way going forward.

Ingredients:

For The Filling:
6 cups blackberries or a mix of seasonal berries
1/3 cup granulated sugar
1 tbsp.all-purpose flour
1 tsp. finely grated lemon zest
Pinch of salt

For The Topping:
1 1/4 cups all-purpose flour
1/3 cup granulated sugar
2 tsp.baking powder
1/2 tsp.ground cinnamon
1/4 tsp.salt
1 large egg
1/2 cup buttermilk
6 tbsp. (3/4 stick) unsalted butter, melted and cooled
1/2 tsp. vanilla extract

Instructions:

Preheat an oven to 375ºF (190ºC). Lightly grease a 2-quart baking dish. To make the filling, in a bowl, gently toss the berries with the sugar, flour, zest and salt until blended. Pour into the prepared baking dish. To make the topping, in a bowl, stir together the flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk together the egg, buttermilk, butter and vanilla until well blended. Pour the wet ingredients into the dry ingredients and, using a rubber spatula, fold gently until the flour is moistened and the mixture forms a soft dough. Drop heaping spoonfuls of the dough onto the fruit, spacing them evenly; the dough will not completely cover the fruit. Bake until the filling is bubbling, the topping is browned and a toothpick inserted into the topping comes out clean, about 45 minutes. Serve warm or at room temperature. Makes 8-10 servings.

Sunday night I went to Liv & Scott's for dinner with Malea & James. I made another cobbler - it was great. The fun was interrupted when I had to go to the office for a couple of hours to deal with a smoke filled building but dinner was great and it was great to hang out with the girls.

I had Indian food for lunch on Monday. I've always been a moderate fan of Indian cuisine - fine with it but never preferring it. Indian Palace changed my feelings - the lunch buffet is really good. I know, a buffet "really good?" Try it and you'll see what I mean.Tuesday, June 9, 2009
I volunteer once a week at a local elementary school reading with 5th and 6th graders. My kids are nice but not very excited about reading. Younger kids are easier to get excited, apathy seems to be the specialty of tweens. Nonetheless I enjoy my time with them and hope that I contribute to their reading improvement.Tuesday night I went to the Parade of Homes with Danielle. This may be the summer of concerts - and I got the party started with Kelly Clarkson. I got tickets for my managers and APX in general had a block of tickets so there were people I knew all over the place.

I sat with Tara, the Dodges, and Esther & Robby...it was a little cold and rainy but we had a good time!

Friday morning I had an appointment with a neurologist about my ear issue. I'd never been to a neurologist and I mistakenly assumed that the appointment would be like any other - false. I was there for an hour and half doing all sorts of weird tests on my balance, hearing, and reflexes. In the end they determined that I'm neurologically healthy. So why do I hear my heart beating 24/7? The neurologist has 2 theories: that I do have idiopathic intracranial hypertension or that the bone separating my carotid arteryand my tympanic cavity is too thin and so I'm simply hearing the blood rushing through my carotid artery. I'm on blood pressure medicine to see if that gets rid of the problem (sign of idiopathic intracranial hypertension) and I'm getting my heart checked out. Then I'll see the neurologist again and go from there. Saturday, June 13, 2009
Friday night Mary and I went on a road trip to visit our friends Sarah and Brian. Saturday morning we made breakfast and then went out to the middle of nowhere to shoot guns and blow stuff up.Dresser before...Brian shooting the dresser...No more dresser...Shooting guns (my first time - thanks Brian for helping me!)...Off-roading...We had burgers for dinner at the Snake Bite - seriously one of the best burger and fries I have ever had.After dinner we got cupcakes and went back to the Haynie's to judge them. The winner? Hostess with the Mostess (top center).To end the day we watched Bedtime Stories which I thought was great. Light and fluffy, but enjoyable.Sunday, June 14, 2009

Monday involved a lot of time in the office and a lot of computer frustration. Between my computer shutting down almost constantly to people crawling under my desk to fix it, not much work got done. Tuesday brought tutoring, work, and nothing noteworthy...but I did get waxed. I've always been an every 6 weeks kind of girl; my hair is blond and I've never found an esthetician I could commit to so I'd pluck if necessary. I've found an esthetician I like, she makes waxing so convenient and now I'm more high maintenance.

Thursday night Brent, Mary and I went to a carnival in the parking lot of a nearby grocery store. We rode the scrambler together and then Mary & Brent went on a crazy upside down ride. Random night, but fun. Later that night the Farmers and Chatmans came to stay while taking their girls to BYU.Friday, June 19, 2009
Friday I worked, met the Farmers for dinner at Brick Oven and hung out at home. (I'm getting tired of blogging...can you tell?)

Saturday night Mary, Brent and I went to dinner at Gloria's, a local Italian restaurant that everyone raves about. Mary and I got pasta with pesto and chicken, Brent got gnocchi in quattro formaggi. Brent won for best dish, but our dinner was delicious too. The garlic bread is amazing, dessert was so good, and the restaurant itself is quaint. If you live in Utah County go check it out.
After dinner we rented Valkyrie. The acting is amazing but overall it's a depressing show.
